It’s a great way to colonize the beneficial bacteria in your gut. It’s been said that our health begins with our digestive system. A healthy digestive system allows us to extract and assimilate the nutrients in our food. The beneficial bacteria in our gut also produce some nutrients for our body through their normal metabolic processes, and help to eliminate pathogenic (bad) bacteria. Kefir is a nutrition that helps to restore your inner ecosystem. INSTRUCTIONS FOR MILK KEFIR: 1. Place 1/2 tsp kefir grains in a clean glass jar. 2. Add 1 cup of milk (fermentation time will depend on milk to grain ratio) 3. Cover jar loosely, and allow to sit at room temperature, out of direct sunlight. 4. After 24-48 hours, strain the kefir using a strainer or colander (never use metal strainer) 5. Enjoy your fresh kefir, or store in the refrigerator for up to several months. 6. Place the grains in a clean jar and repeat steps Flavoring Fruits or sweeteners such as honey or agave. Make a smoothie or strain it even further in a cheesecloth/reusable coffee filter, making a soft cheese that you can also flavor. Separation (curds & whey) Happens when temperature is too warm or over fermentation (sat too long). This kefir is more tart than normal but is still useable for consumption, particularly cheese making. Some other information: Kefir will require an adjustment period of a batch or two after events like being shipped or switching types of milk. When you receive your kefir grains, don't be disappointed if the first couple of batches taste different! The yeast build-up during shipping needs to level out. When switching types of milk, your kefir will go through a couple of "transition" batches, where it may taste differently, as well. For this reason, it's best to stick with one type of milk if possible, using excess grains for other types. If you encounter a problem, please give me a chance to help you.
