Description: Buy 2 or more items from my store and get free packet of seeds. CULTURE: Sow from early spring through midsummer. May be sown into late fall in mild climates or when overwintering in a high tunnel or other protected structure. For full-size bunching: sow 15 seeds/ft. (10–12 seeds/ft. for 'Green 70 D Improved'), 1/4" deep in rows 12-18" apart. Most varieties do not require thinning; see individual product descriptions for varieties that do. For baby-leaf production of 'Tokyo Bekana', see the Baby Leaf Brassica Greens culture. SUCCESSION PLANTING: Sowing every 7-10 days will provide a continuous harvest of both budding/cutting and heading types. INSECT PESTS: Flea beetles are best controlled by covering with floating row covers from day of sowing. HARVEST: Budding/cutting types (choi sum and kailaan): harvest when the buds are just mature, or a few are just blooming. Multiple harvests are possible for these types. Heading types (celtuce, Chinese cabbage, and komatsuna): may be harvested from medium to full-size, depending on local market preferences. These types are suitable for single harvests. Milder than regular mustard greens, this variety has thick, smooth leaves on upright, heat and cold tolerant plants. Tendergreen is widely used both in stir fry and in salads. Its tender leaves, as well as its flowering stems, are used raw or are cooked and have a flavor between mustard greens and cabbage.  A cousin to kale and collards, mustard is a tenacious leafy green but it's not as cold-hardy. Grow in clumps about 12-18 inches apart. Use straw mulch to hold in soil moisture. Start 4-6 weeks before the first frost for a fall harvest. For a spring harvest, start seeds 4 weeks ahead of the last frost. You can harvest and allow to regrow over a period of a couple weeks as long as the weather permits. Cut leafy greens 3-4 inches from the ground and allow sufficient time to regrow. Komatsuna, a biennial, is a leafy form of wildturnip and is an evolved form of pak choi or Chinese cabbage. In fact, it is related to bok choy, rapini, turnips, kale, cauliflower, Brussel sprouts, and broccoli. It is very tolerant of hot or cold temperatures, maturing in just around 40 days. It can be grown the whole year round, with peak season fall through spring, and can reach a height of 12 to 18 inches. The komatsuna plant is pretty useful – its flowering stems and tender leaves can be eaten either raw or cooked. It has long, slender stems, and spoon-shaped leaves. Its varieties includes torasan, senposai, summerfest (which best grows during the summer season), and misome. It tastes somewhere between a mustard and cabbage. Komatsuna doesn’t need meticulous gardening care; consistent irrigation, occasional fertilizer, and a weed-free area is enough to ensure its healthy growth. Also, komatsuna’s beta-carotene content protects first-hand smokers from the onset of lung cancer. The vitamin K in komatsuna (350 percent of the recommended daily intake) is important for optimum blood clotting and iron absorption in the body. The vitamin C in komatsuna, which is around 65 percent of the body’s daily recommended allowance, is essential for the synthesis of certain neurotransmitters and collagen, a protein that enhances the abilities of connective tissues and helps heal wounds faster. Komatsuna also supports the digestive and reproductive systems.Ways to use komatsuna Komatsuna’s young leaves can blend with other greens to make a salad, while its more mature leaves can be used in stir-fries. It can be used in spring rolls and pasta dishes. It can be preserved as a pickled vegetable. It also makes a tasteful addition to stews, especially when seasoned with ginger, garlic, and scallion. Komatsuna is great when cooked with smoked meats, sesame, rice wine vinegar, lemon, cream, crab, chili peppers, ham, mirin, miso, salmon, shrimp, soy, tuna, leeks, onions, and sesame or olive oil. It can also be used as a sandwich or burger topping or omelet garnish. Spice them up and saute them any which way you like.
