ASSAM BUKHIAL:Although Assam region does not benefit from the high elevations, this area has remarkable soil alluvial conditions and ideal temperatures for tea. Teas from Assam tend to be higher in natural tannins and are more astringent and "thick". Bukhial is the best estate in Assam valley. It is situated on the south side of Brahmaputra River, a large river with deposited rich loam from millennia of fall flooding. The region has hot steamy monsoon season and dry cold winter. The soil conditions and climate produce a mellow and malty TGFOP (Tippy Golden Flowery Orange Pekoe). HOT TEA: Put a slightly heaping tsp of loose tea for each 8oz of freshly boiled water. Steep 3-7 minutes. Add milk and sugar to taste. ICED TEA: 6 slightly heaping tsp of loose tea for each 1QT iced tea. Pour 1 1/4 cup boiling water on tea. Steep 5 minutes. Quarter fill serving pitcher with cold water. Pour into pitcher straining tea. Add ice.
