Please note that the mold shown and follower is NOT INCLUDED. This Press can accommodate up to a 3Kg mold. This press is made of Food Safe HDPE and Northern hardwoods finished with a hand-rubbed food-safe finish. Pressure is applied by tightening the knobs that tension the included stainless steel springs that in turn push against the bottom bar and against the mold follower. The press has been calibrated using a postal scale to insure that the pressures are accurate. A step pressure gauge is included for you to set the pressure called for in the recipe. When the springs are fully closed, the press exerts 50 lbs of pressure on the mold. If your mold is taller than your follower disk, then just add a small can between the bottom arm and the follower. As with any spring-type press, you should expect to have to re-tighten the springs during initial pressing. Turning the mold 1/4 way after the first pressing will also help avoid making "crooked" cheeses! Compact yet capable, the max capacity of the press is a mold/follower with a diameter of about 8-1/2" and 7" height. Base measures about 11" x 8" and the rods are 9" center to center. Zinc-coated threaded rods are 12" long. Star knobs are included for comfortable tensioning of pressure. It's easy to break down for storage between batches too! The press is easy to setup and use and is also easy to clean. Just wash it off by hand after use and it's ready to go next time. Please don't put it in the dishwasher!
