To prepare these crabs, fill the base of a large pot with equal parts water, vinegar, and beer, if desired. Place a rack just above water level for the crabs to steam on, and layer the crabs on the rack. Steam the par-cooked crabs for 6-8 minutes, taking care not to dry the meat for optimal succulent texture. There is no recognizable loss of quality from re-steaming.
