Description: This is a vintage, hand-forged (handgewachset) Stubai, fromthe town of the same name in the Austrian Alps. It is vintage (probablyfrom the '60s-'70s, though hard to know for sure exactly when they changed tothe basic Wusthof, F. Dick, Henckels design that they still use), hand-forgedof virgin steel (late '80s all the best European cutlery companies switched torecycled steel), and with the unique, signature handle design. These werebriefly sold in this country and apparently were priced higher than theaforementioned German lines. I ran across Stubai cutlery (very rare inthis country, even on ebay - much more common are their woodworking tools andclimbing gear –pitons, ice axes, etc.) AFTER I had bought all the cutlery I couldpossibly need, but decided, given my heritage, I MUST have at least oneAustrian knife in the block. I was skeptical about the handle design andmaterial, but my wife and I were quickly converted and it is now our go toparing knife and the only knife that is now represented in the home, cabin, ANDtravelling sets, as well as in the kitchens of all immediate family members andseveral friends. I think the handle material has a "warmer"feel than the black plastic handles, and the blade shape is great. From thesharpening and use characteristics of my own knife, these seem to be hardersteel than the German knives, so takes a bit more effort to get a keen edge,but they hold it longer. You will beimpressed.
